White Chocolate Orange Goji Berry Fudge
These are gorgeous, they do cause me some problems because I have no will power whatsoever and can't stop myself eating the whole tray. Fortunately they are full of good stuff!!
- 1 Cup of goji berries
- ½ Cup melted cacao butter
- ½ Cup raw cashews
- ½ Cup agave nectar or honey
- ½ Cup cacao nibs (optional)
- Zest from 1 orange
Melt the cacao butter (I normally use a bowl in a pan of boiling water). Blend until smooth cashews, ½ cup of goji berries and agave nectar. Add the blended mixture to the melted cacao butter. Finally mix in the cacao nibs the rest of the whole goji berries and a zest from 1 orange
Spread in a glass plate (think chocolate almond bark). Chill in the freezer until firm. Enjoy!
