Bread
I have talked to many of the guests of the clinic about bread before. When talking about not having bread in the house, a sudden look of fear and panic sweep over many of the clinic's guests. So today, to soften the concept of not having bread, I have some alternative recipes. You do have to be prepared that these aren't going to produce your typical loaf of bread. Yet I think they are a good stepping stone to help you along your way.
Flax Seed Bread
Ingredients:
- Flax Seed Meal 300g
- Baking Powder 1tbsp
- Salt 1tsp
- Sugar 2tbsp
- Eggs 5 Beaten
- Water 180ml
- Oil 120ml
Preheat oven to 350F/180C/Gas Mark 4
Method
1) Mix dry ingredients well -- a whisk works well.
2) Add wet to dry, and combine well. Make sure there aren't obvious strings of egg white hanging out in the batter.
3) Let batter set for 2 to 3 minutes to thicken up some (leave it too long and it gets past the point where it's easy to spread.)
4) Pour batter onto pan. Because it's going to tend to mound in the middle, you'll get a more even thickness if you spread it away from the center somewhat, in roughly a rectangle an inch or two from the sides of the pan (you can go all the way to the edge, but it will be thinner).
5) Bake for about 20 minutes, until it springs back when you touch the top and/or is visibly browning even more than flax already is.
6) Cool and cut into whatever size slices you want. You don't need a sharp knife; I usually just cut it with a spatula.

145 cal, 11 g fat, less than 1 g carbs, 6.5g protein
Some other awesome additions are pumpkin, cinnamon and vanilla extract. Great topped with almond or peanut butter!
Gluten Free Brown Bread for Bread Machines
Follow this recipe to make a great wheat free and gluten free alternative to ordinary wheat-based bread.
Ingredients:
- Coconut Milk 1 pint
- Vinegar 1½tsp
- Oil 9tbsp
- Eggs 3
- Gluten Free Flour 675g
- Salt 1½tsp
- Sugar 3tbsp
- Yeast 3tsp
Method
1) Weigh the milk into a bowl then beat in the vinegar, oil and eggs. Pour this mixture into the bread machine pan.
2) Add the flour, salt and sugar to the pan and stir with a spoon.
3) Sprinkle the yeast on top.
4) Start the machine on a normal bread programme.
5) After a few minutes mixing, lift the machine lid and scrape down the sides of the pan using a plastic spatula.
6. Continue the machine on the normal baking programme.
